The name "Apricus" is derived from a medieval Latin word meaning 'basking in sunshine' and 'delectable,' encapsulating the essence of their wines and the environment in which they are produced.

The winery is a collaboration between entrepreneur Willy Sabo, vineyard manager Sam Baptiste, and winemaker Aaron Crey. Willy brings a strong sales background and a passion for wine, Sam offers extensive knowledge of the land and grape growing, and Aaron contributes his expertise in winemaking.

Apricus Cellars sources its grapes from vineyards managed by Sam Baptiste, located just minutes from the winery. This proximity allows for close monitoring of grape quality, which is reflected in their range of wines, from light Pinot Gris to bold Cabernet Sauvignon blends.
